SIHAZYM SupraMash enzyme is a granulated highly active enzyme preparation, produced from a pure aspergillus niger strain culture for optimum liquefaction of high-quality fruit mashes. It was developed for promoting complete mash disintegration, thus ensuring optimum subsequent yeast growth and applied during the mashing process it also leads to increased release of primary fruit flavors.
